Another neat idea for specialty retail: Carbon curbing!
This will definitely take the guilt off spending and using fossil-fuel-run vehicles. The world's first kiosks, managed by the company 3Degrees, Inc., are currently in the San Francisco airport.
The kiosk calculates the amount of CO2 a person has produced by his or her flight or any other activity, and computes a certain amount for the person to pay to offset the carbon emission. The proceeds (or a good part of them) go to organizations that are dedicated to restoring natural habitats and offsetting carbon emissions.
The company is open to business partners, but you can certainly set up your own to help environmental projects in your locality.
Making people aware of their responsibility to the environment puts the "special" in specialty retail -- a venture worth exploring.
